2 1/2 cups almond meal
1/2 teaspoon bicarbonate soda
1/2 teaspoon sea salt
120 g butter, softened
1/3 cup stevia granules, powdered
1 teaspoon vanilla powder
1/2 cup cacao nibs
3 tablespoons raw cacao powder
1 1/2 tablespoon coffee, ground
Preheat the oven to 180 degrees and line a baking tray with baking paper.
Pulse the almond meal, bicarbonate of soda and salt briefly in a food processor. Add the rest of the ingredients and blend a little more.
Spoon heaped tablespoons of the mixture onto the baking tray and press down with your hand to flatten.
Bake for about 8 minutes until golden. Cool on wire racks.
