These little bad boys are our go-to special baked treats. They are so quick and easy to make, taste like regular Anzac biscuits and are neutral enough for those fussy little taste buds...
Here is what you’ll need:
125 g of unsalted butter (or half a standard butter block)
100 g (3/4 cup) of maple syrup
1 tsp of bicarbonate of soda
100 g (3/4 cup) of rolled oats
150 g (1 cup) of whole meal spelt flour
50 g (1/3 cup) of desiccated coconut
Preheat the oven to 160 C
In a small saucepan, heat the roughly chopped butter and maple syrup until melted.
Combine all other ingredients in a mixing bowl and add the liquid buttery maple syrup from the saucepan. Make sure the dough is well combined. It should be slightly sticky.
Place a spoonful of batter on 2 lined baking trays. Flatten them by hand and make sure you leave a large enough gap between them for spreading.
Bake for 12 minutes. Set aside for 5 minutes.
And taa-daa! A great, easy enough recipe for our little people to follow. Just keep those sticky little fingers out of the batter!
Note: I often like to add half a cup blended activated nuts for an extra nutrition boost. All other ingredient portions can remain the same.
