Berry Cheesecake Ice-Cream




Yes, it's every bit as good as it sounds.

Sometime last week Zeph awoke with a burning desire to make icecream. I always relish the occasions that he directs some fun activity for us to do together.

Before hitting the supermarket we googled recipes until we found something delicious. Berry Cheesecake it was.

With both of the kids on the bench we mixed and stirred before licking beaters.

If you don;t have a stand mixer and ice cream maker, I've included the link to another great recipe at the bottom. If you don't have plans for tomorrow, I suggest you lock this one in.


INGREDIENTS 

  • 2  cups of fresh or frozen berries (I used frozen)
  • ¼ to ½ cup sugar 
  • 1 block of cream cheese
  • ½ cup sugar
  • ¾ cup whole milk
  • ½ cup heavy whipping cream
  • ¼ teaspoon lemon juice
  • ¼ teaspoon salt

INSTRUCTIONS
  1. Mix berries with sugar and refrigerate until ready to use. 
  2. In a stand mixer, beat the yogurt cheese and sugar on medium speed until smooth (about 2 minutes).
  3. Add the milk and cream cheese, and beat on medium speed until you get a thick, smooth consistency (about 4 minutes). Add the lemon juice and salt, mixing just enough to incorporate. Refrigerate the mixture for about 3 hours or overnight.
  4. When you’re ready to make the ice-cream, churn the chilled mixture according to your ice-cream maker’s instructions.
  5. Add the berries to your mix or swirl them through manually if you'd rather it be pretty.
  6. Freeze for at least 2 hours before serving, with the remaining ½ cup of purée drizzled over each bowl.
  7. Devour.

If you don't have an ice cream maker, don't despair- use this recipe instead.
