This meal has become a staple in our house at the moment. It's easy, quick, cheap and we always have the ingredients on hand.
Whisk together the milk and eggs, and set aside. Heat the oil in a small frying pan over a high heat, adding the onions, garlic, chorizo and chilli, and cooking for 3 to 4 minutes or till the onion is softened. Add the tomatoes, salt and pepper, and cook for 5 minutes or till the tomatoes are softened and the mixture is slightly thickened. Add the egg mixture, top with feta and cook for 5 minutes. Place under the grill for 2 to 3 minutes or till the frittata is set and golden in colour. Garnish with fresh coriander and serve.
