Cook It- Donna Hay Cookie Dough

A few days ago I mentioned a beautiful gift that our son received for his 2nd birthday. Today, I have been busily preparing a replica. Tomorrow- the cook off. Want to join me?

Here is the recipe from my good looking lady friend, Jess. Whip some up tonight so it's ready for the morning.

Donna Hay- Cookie Dough

180g Unsalted butter, softened
3/4 Cup (120g) brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups (300g) plain flour, sifted
1 teaspoon baking powder, sifted
150g milk chocolate, chopped (I used some almonds too)

Preheat oven to 180 degrees.
Place the butter, sugar and vanilla in the bowl of an electric mixer and beat until pale and creamy.
Gradually add the eggs and beat well.
Add the flour and baking powder and beat until a smooth dough forms.
Fold through the chocolate.

Instead of rolling cookies, put the mixture into the fridge for about half an hour to firm it up a bit.
Roll dough out on a floured surface and cut out your shapes

Bake for 12-15 minutes or until golden. Allow to cool on the trays. Makes 12

I picked up this little cooking set from the supermarket for $10, thank you lint filter.

I'll let you know how they turn out. Tonight for River Cottage Night we are having a Chinese prawn soup. What are you having?
